Zucchini Bread Yield: 8 to 10 servings Ingredients - 3 cups flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 3 eggs
- 1 cup corn or vegetable oil
- 2 teaspoons vanilla extract
- 1/2 cup chopped walnuts
- 2 cups grated zucchini
Preparing Preheat the oven to 350° F. Generously grease two 9-by-5inch loaf pans. In a large bowl, mix the first 6 ingredients. Add the eggs, oil, vanilla, walnuts, and grated zucchini. Beat together until well blended. Pour the mixture equally into both loaf pans and bake for 1 hour. The zucchini bread may be served warm with your meal or as a dessert.
