Zucchini Bread

Yield: 8 to 10 servings


  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1 cup corn or vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped walnuts
  • 2 cups grated zucchini


Preheat the oven to 350° F. Generously grease two 9-by-5inch loaf pans. In a large bowl, mix the first 6 ingredients. Add the eggs, oil, vanilla, walnuts, and grated zucchini. Beat together until well blended. Pour the mixture equally into both loaf pans and bake for 1 hour.

The zucchini bread may be served warm with your meal or as a dessert.
