Pumpkin Cake


  • 3 cups granulated sugar
  • 1 cup shortening
  • 3 eggs
  • 2 cups pumpkin pulp
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon powdered cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon allspice
  • Frosting (optional)


Cream the sugar and shortening in a large mixing bowl. Add the eggs, blending until smooth. Slowly add the pumpkin and vanilla. In a separate bowl, sift the flour, soda, cloves, cinnamon, nutmeg and allspice. Gradually add the flour mixture to the pumpkin, stirring until well-blended. Pour the batter into a greased 10" tube pan. Bake in a preheated 350° oven for 50 minutes on the low rack of the oven until cake pulls away from the side of the pan. Cool in pan. Frost or sprinkle with powdered sugar.
