Peach Cobbler

Filling Ingredients

  • 2 tablespoons cornstarch
  • 1/4 cup light brown sugar, firmly packed
  • 1/4 cup honey
  • 1/2 cup water
  • 6 cups sliced peaches
  • 2 tablespoons butter
  • 1 1/2 tablespoons lemon juice

Batter Ingredients

  • 1 cup cake flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons softened butter
  • 1 egg slightly beaten


Heat oven to 375°F.

Put the cornstarch, brown sugar, and honey in a 1 quart saucepan. Gradually add the water, stirring constantly until smooth. Place over medium heat and cook until thickened, still stirring constantly. Add the peaches and boil for 1 minute. Remove from heat and add butter and lemon juice. When the butter has melted, stir and pour into a greased 9" x 13" baking pan.

In a mixing bowl, combine all ingredients, beating until well mixed and smooth. Drop batter by the tablespoon over the hot peach mixture. Bake in a preheated 375°F oven for 60 minutes. Serve warm with whipped cream.
