Patsy's Pasta Primavera


  • 1 pound ziti
  • 1/2 cup broccoli
  • 1/2 cup zucchini
  • 1/2 cup tomatoes, chopped
  • 1/2 cup mushrooms, chopped
  • 1/2 cup carrots, chopped
  • 1/4 cup olive oil
  • 1 teaspoon garlic, diced
  • 2 teaspoons salt
  • Pinch of black pepper
  • Splash of white wine
  • Fresh basil


In a large pot bring 3 quarts of water to a boil. Put in ziti and add 2 teaspoons of salt to the water. Cook according to the package directions. While the ziti is boiling, heat olive oil and garlic in a large skillet. Sauté the garlic until golden brown. Then add the broccoli, carrots, mushrooms, and 1/4 cup water. Cover and simmer for about 3 minutes, then add the tomatoes, zucchini, white wine, basil, and salt and pepper to taste. After the pasta has been drained, stir in a little of the vegetable mixture. Serve the pasta and spoon the remaining vegetables on top.
