Mixed Green Salad with Dandelion
Toss together coarsely chopped dandelion greens, arugula, watercress, and Bibb lettuce. Add thinly sliced sweet onion rings. Dress with a mixture of olive oil, red wine vinegar, minced garlic, a touch of Dijon mustard, a pinch of salt, and freshly ground black pepper. Add anchovies, croutons, or slivered sweet peppers if desired.
