Italian-Style Avocados

Yield: 4 servings


  • 2 large avocados
  • 4 green leaf or Boston lettuce leaves
  • 2 tomatoes, sliced
  • 4 scallions, chopped
  • 1 cucumber, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 3 tablespoons chopped fresh parsley or dried parsley
  • 3 tablespoons chopped fresh basil or dried basil
  • 3/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper


Peel the avocados, cut in half lengthwise, and take out the pits. On a large platter, arrange the lettuce leaves, tomatoes, scallions, and cucumber slices. Place the avocado halves on top. In an electric blender, combine the onion, garlic, parsley, basil, olive oil, salt, and pepper and blend until smooth. Pour over the avocados. Serve with your favorite Italian bread or rolls.
