Bette's Plum Torte

Yield: 6 to 8 servings


  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 3 egg yolks
  • 1/2 cup cornstarch
  • 1 cup flour
  • 1 1/4 teaspoons baking powder
  • 5 plums, pitted and sliced
  • 2 teaspoons ground cinnamon
  • 3 tablespoons sugar


Preheat the oven to 350° F. In a large bowl heat the butter, vanilla, sugar, and egg yolks. Add the cornstarch, flour and baking powder, beating until the batter is well mixed and has a dough-like consistency.

Place the mixture in a greased 8-inch square or 9-inch round baking pan, pressing the dough onto the bottom and sides of the pan. Top with the plums and sprinkle with cinnamon and sugar. Bake for 1 hour.
