Arturo's Caesar Salad


  • 2 cloves garlic, crushed
  • 3 anchovies, crushed
  • 1 egg yolk
  • 1 tablespoon Dijon mustard
  • 2 dashes Worcestershire sauce
  • 1/2 lemon, squeezed
  • 1 head romaine lettuce, rinsed
  • 1 cup croutons
  • 1/4 cup Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • Fresh ground black pepper to taste


In a large wooden bowl mix garlic, anchovies, egg yolk, and Dijon mustard. Add Worcestershire sauce and lemon; mix well. Tear romaine into medium pieces then add croutons and Parmesan cheese. Toss together and add oil, wine vinegar and fresh ground black pepper until well coated.
